
Manchego is a Spanish cheese that got its name from a region in Spain, La Mancha, and a breed of sheep called Manchega. The production of this cheese is strictly regulated by Spain and has been granted “Protected Designation of Origin” PDO by the European Union. This variety of Manchego is firm and buttery and is aged for 6 months. Although there are many varieties of Manchego that ranges in texture depending on the length of age.
