Caciotta is an aged farmhouse cheddar. Getting its name from the word “cacio” meaning cheese, it is a staple in rural Italian households. It is usually eaten as a table cheese or added to other dishes as an ingredient to lift the flavor up.
Similar to Monterey Jack cheese, they are pretty much replaceable in recipes. Caciotta will just be a little milder compared to Monterey Jack.
